Hope everyone had an awesome Christmas! I spent so much of it eating and lets be honest, I don’t go back to work until Monday, so I am still eating ALL the festive food. I always struggle with post-christmas food leftovers – we always have turkey curries, turkey fried rice, christmas toasties, turkey noodles (you name it!) and this year I decided to try something new! I snapchatted it earlier today (I’m @diamondcanopy) and I all I did was buy some ready made pastry and then pop cranberry sauce, chopped ham, stuffing and a tiny bit of cheese on the pastry. Simply roll up the pastry and cut it up into sections. I made it up as I went along and popped them in the oven at about 200ºc for about 20/30 mins (adding a little egg wash in the last 5 minutes to give them a little bit of colour) and voilà – super easy little festive pastries!
